Patrick Saboe’s journey into winemaking began on his honeymoon to California wine country, where a passion for fine wine turned into a lifelong pursuit. Originally from Charleston, SC, he developed his palate while working in the restaurant industry before enrolling in the Enology & Viticulture program at U.C. Davis.

With nearly two decades of experience, Patrick has held key winemaking roles at renowned wineries, including Robert Sinskey Vineyards, Keller Estate, and Petroni Vineyards, where he refined his expertise in Bordeaux varietals and Pinot Noir. Today, as a Consulting Winemaker for several Napa and Sonoma brands, he is dedicated to crafting wines of balance, complexity, and authenticity.

Patrick’s philosophy is simple: exceptional wines are made from exceptional fruit with exceptional care. His hands-on approach and deep commitment to quality make him an integral part of Aldan Wines, ensuring every bottle meets the highest standards.
